Here's a recipe from the book!

Raylene Pringle's Adults Only Chocolate Pecan Balls (From Lori Wilde)

One (9-ounce) package chocolate graham crackers
1 1/2 cups coarsely chopped toasted pecans
1 cup confectioner's sugar
1/2 cup plus 2 tablespoons cocoa powder
1/4 teaspoon cinnamon
1/2 cup good bourbon (use a good quality bourbon)
2 tablespoons golden syrup (may substitute light corn syrup)

In a food processor pulse graham crackers cookies until they are finely ground. Add the pecans and pulse to incorporate. Add the confectioner's sugar, two tablespoons of the cocoa powder, and cinnamon combine those as well. Transfer the mixture to a bowl and add the bourbon and the golden syrup. Using a big spoon, stir everything together until well combined. The mixture should look crumbly. Transfer the bowl to the refrigerator and let it chill for 30 minutes.

Spread the remaining 1/2 cup of cocoa powder on a plate. Using a tablespoon, scoop out spoonfuls of the mixture and shape it into one-inch balls. Roll the balls in the cocoa powder. Put the balls on a wax paper-lined baking sheet and refrigerate until they are firm, about one hour. Store the balls in an airtight container in the fridge for up to two weeks. Separate layers of balls with wax paper to prevent sticking. Serve to Adults Only.
Enjoy!
