cottage cheese pancakes

Ella and I had these for breakfast this morning. I make them when a get a carb-craving. They're both yummy and healthy--loaded with protein--and hit the spot every time. I spread them with Smucker's strawberry Simply Fruit and she goes for the maple syrup every time. (Use the real stuff. I know it's more expensive but it goes a long way and tastes so much better!) I got the recipe from my sister-in-law's mother, Carol Marshall, who always has great recipes. I know the ingredients sound interesting, but everyone who's tried them loves them!


COTTAGE CHEESE PANCAKES

Mix in bowl:
2 T. butter, melted in microwave
2/3 cup cottage cheese (small curd)

Stir in:
2 eggs, beaten

Add:
1/2 cup flour (I use all whole wheat)
1 tsp. baking powder
2 T. milk
1 tsp. sugar (optional)

Place 2-3 tablespoons of batter for each pancake (they spread out a little) on a pre-heated griddle that's been sprayed with Pam. Don't overcook!

Makes about 8-10 pancakes. (I half the recipe for just two of us.)

I have a simple "family favorites" file for recipes I use every week or month. It has a three-fold purpose:
1. I'm not searching through stacks of recipes at dinner time.
2. I've already compiled the recipes I'll be using in my family cookbook project my ward members will have the opportunity to create this year. (If you're planning to do this project, start your own file now and just add it to your file as you make each recipe.)
3. These are the recipes I use for my three-month supply of meals for the new food storage plan. I'll share more about that in another post because it's working great for us.

I also have a "recipes" file for those we already like but that I use less often (they take more time, have more ingredients or we use them for holiday meals). Then a third file that's "recipes to try."
