teacher favorites fill-able form & personalized notecards

I laughed when Patrick told me he mentioned to Ashlee, that when I ask her about things (concerning their upcoming wedding) way ahead of time, it's not that I'm being pushy, it's that I like to be organized and prefer items checked off my "to do list" much sooner rather than later. (I also need time to shop, right?) I guess I never realized Patrick figured that out. :)

Before we went to meet Ella's new teacher before school started, I created a quick form for Mrs. Reiber to fill out when she had a few minutes. It asks about her favorite things. The form was completed and in Ella's backpack the first day of school. (Thanks, Mrs. Reiber!)

It's so hard to guess what someone would like, when you don't know them personally. I ran this idea past my teacher friends/family members and they all assured me they loved it and it was a great idea.

I wanted Ella to be involved, so I had her share her favorite things too.

I had some friends ask for a copy of the questionnaire, so I created a fill-able form you can tab through and add your child's own information. It's nothing fancy, but it's simple and helpful.

I ran across these darling note cards by Rebecca Cooper, on her blog, simple as that. It's at the very top of my list of "must read" blogs. I get so many great ideas for both my girlies and activity days projects. And she's an amazing photographer!

Rebecca's cards are mini and meant to be attached to a bundle of pencils--love that idea! I wanted them just a bit larger though and decided to personalize some for Ella's teacher.

They measure 3" x 3", which I thought was a good size for a little note.

first day of kindergarten: a big thumbs up!

sign from How Does She?

I can't believe how quickly this day has come. Elles told me for weeks she was excited, but also feeling a little nervous about starting Kindergarten.

She loaded up her pink backpack with her special supplies and we headed off to school.

I tried to get Elles to wear "real" shoes, but she says they make her feet too hot. She takes after me, so flip-flops it was.

Ella was one of the first students to arrive. She had already met her new teacher (who showed her around the classroom), so Ella knew just were to hang her backpack and store her supplies.

Ella and her teacher, Mrs. Reiber. I love, love, love her and it's only been a week! We have a months worth of homework assignments for Ella, a book to record it in, a list of everything the class is learning this month and a set of sight words. We know exactly what to work on and reinforce with Ella at home. She also has a great journal for each of the kids to draw pictures and write their own stories. You know I love that. She's known for being organized and structured and great with the children. Every single parent I talked to who has had Mrs. Reiber as their child's teacher goes on and on about how wonderful she is. We feel so lucky and blessed. She's an answer to our prayers. I also happen to know she loves to quilt. Organized, structured, quilting, loves teaching--I think we were cut from the same mold. And she's a grandma too!

The kids begin their day with different activities. Today it was reading.

This photo makes me smile. Before we left for school, Ella asked if I'd stay with her until she felt comfortable. I told her I would stay until it was time for class to start. We decided when she felt okay about me leaving, she would give me a "thumbs up." Ella then told me that if she didn't want me to leave yet, she would give me an "X".

It was time for school to start and I finally got the big "thumbs up." :) As excited as I was for Ella (and me ;)), I did get a little teary for about 17 seconds. :) I was both excited and anxious to pick E up after school to see how the day went. When I asked what she liked most about her day, she thought for awhile and said, "Everything!" Love. it. Patrick even called Elles to find out how her first day went. He's such a great big brother.

Fresh Strawberry and Vanilla Jam

Our back to school checklist went something like this: overpriced girls clothes from Justice (because that's where all the cool girls shop); tennis shoes that could not have an ounce of pink, but had to be turquoise or purple (wow, that was fun); a haircut that absolutely had to include the new feather trend;  a monogrammed backpack from Pottery Barn with a matching binder; $100 in school supplies; and last but not least, let's not forget that lovely check we wrote the school for even more school supplies.  Because the ones we already bought just weren't enough! Wow...back to school will totally break you.  Doesn't matter how long you plan for it. It will get you every time.

Thank God for peanut butter and jelly sandwiches.  There is a reason why they are so popular, right?  Moms love them because they're easy, they're cheap, and they don't require an ice pack.  Kids love them because they're delicious and let's face it....all the cool kids are eating them!

For Back to School week at I Heart Cooking Clubs I decided on Jamie's Strawberry Jam, perfect for peanut butter and jelly (jam) sandwiches.  Jamie's strawberry jam includes one whole vanilla bean, giving it quite a bit of vanilla flavor.  I added a pinch of salt to bring out the sweetness and a squeeze of lemon just because I felt it needed some brightness.  This recipe makes a lot of jam and is perfect for so many things.
Fresh Strawberry & Vanilla Jam

Seeds of 1 vanilla pod
10 1/2 ounces (300 grams) sugar
2.2 pounds (1 kilogram) strawberries, washed & hulled
1-2 tablespoons lemon juice
dash of salt

Run your knife down the vanilla pod and scrape out the seeds.  Add with the pod to the washed and hulled strawberries and sugar. Add lemon juice (to taste) and a dash of salt.  Mush it up a bit with a whisk or pastry cutter, leaving some large chunks. Put on a medium heat to bring to a gentle simmer and leave to cook for about 4 minutes. Using a ladle remove the scum from the top and leave to cool. Place in sterilized jars and store in the refrigerator.

The Homesick Texan Cookbook Spotlight & Cook-off: Pork Tacos, Dallas Gas Station Style and Austin-Style Black Beans

If you ask me, the very best part of blogging isn't always about the food, but about the camaraderie associated with the food. We food bloggers are a group of people who are bursting at the seams with passion and it's that passion that unites us.  That's why when one of our very own writes a cookbook we all feel proud and honored.  We understand the meaning behind the cookbook and realize that someone's dream, much like our own, was able to come true....all through blogging.  Something that started on a whim, as a hobby, grew to achieve maximum potential.  So, my congratulations to Lisa Fain of  the popular blog Homesick Texan for writing one drop dead gorgeous cookbook full of amazing recipes, gorgeous photos, and heartfelt stories.

I am so happy to be a part of The Homesick Texan Cookbook Spotlight & Cook-off and want to thank my friend Heather of girlichef for inviting me to join.  Cooking these recipes on my own is great, but cooking these recipes together with a group of friends is ten times better.  In the next few weeks we will be highlighting lots of tasty and beautiful food, the food of Texas.  It's going to be a fun ride.

First up, and very memorable, are these Pork Tacos prepared Dallas Gas Station Style.  Now, I've never looked forward to filling up at a gas station before, but if I ever get to Texas, the gas station is the first place I'll go!  These pork tacos were undeniably delicious.  Tender chunks of cubed pork tossed in a thick paste of pasilla chiles, chipotle chile, garlic, and seasonings stuffed into a corn tortilla and topped with cilantro and diced yellow onion...I'm not just talking good.  I'm talking you will rave about it good.  The aroma of that pork cooking will have everyone rallying around the dinner table waiting to be served. The food will be inhaled and all will be silent.  After dinner you will find yourself looking through The Homesick Texan book, just looking for another winner to prepare for your family.  Yes, they are that good!

Pork Tacos, Dallas Gas Station Style
Adapted from The Homesick Texan by Lisa Fain
Serves 4-6

For the Pork:
4 dried pasilla chiles, stems and seeds removed
2 pounds pork shoulder
1 canned chipotle chile in adobo
4 cloves garlic, chopped
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4  cup orange juice
1/4 cup pineapple juice
1 tablespoon white vinegar
2 tablespoons olive oil
salt, to taste
1 tablespoon vegetable oil

For the Tacos:
6 jalapeno chiles
Tortillas, either corn or flour
1/2 cup chopped cilantro
1/4 medium yellow onion diced
1 lime, cut into wedges
salsa, for serving

In a dry skillet heated on high, toast the pasilla chiles on each side for about 10 seconds or just until they start to puff.  Fill the skillet with enough water to cover chiles.  Leave the heat on until water begins to boil and then turn off the heat and let the chiles soak until soft, about 3 minutes.

While the pasilla chiles are soaking, rinse the pork and trim the fat.  Cut into half-inch size pieces.

Once the pasilla chiles are hydrated, drain and rinse the chiles.  Place the chiles in a blender along with the chipotle chile, garlic, oregano, cumin, orange juice, pineapple juice, vinegar, and olive oil.  Blend until a smooth puree forms.  Taste and add salt.

Toss the diced pork with the chile puree, place in a nonreactive container, and store covered in the refrigerator for 8 hours.

Before cooking, let the pork sit at room temperature for 30 minutes.  To cook the pork, heat the vegetable oil in a large skillet on medium.  Fry the pork in the skillet for 15 minutes, stirring occasionally.

Note: I did question whether or not the pork would be tender after only cooking 15 minutes.  If the pieces of pork are kept small then they are fairly tender.  Of course, the pork does benefit from the addition of a little water and an additional hour or so of simmering on the stove.

While the pork is cooking, place the jalapenos under the broiler and cook for 10 minutes, or until blackened, turning once.  Serve pork in warm tortillas, topped with cilantro and onions, along with the roasted jalapenos, lime wedges, and salsa on the side.
Now, I've talked beans with you before.  To say I love beans is a serious understatement.  In fact, I love beans so much I would have to tell you that there's no way I could be a fair judge when it comes to bean recipes.  They're all winners to me.  That's why I sought out the opinions of everyone else at the table and I'm happy to say that everyone around the table loved these beans...and we're talking about folks who could take 'em or leave 'em most the time.

My beans cooked for a bit longer than what's called for in the book and therefore they didn't hold their shape as beautifully as some of the others who prepared them.  I'm not mad about that.  I think I actually preferred them a little on the refried side anyway.  At any rate, they were slightly smoky, slightly spicy, full of flavor and extremely good.  The recipe makes a huge batch and my batch is nearly gone.  I'd definitely make these again.

Austin-Style Black Beans
Adapted from The Homesick Texan by Lisa Fain
Serves 8-10

1 pound dried black beans
1 tablespoon vegetable oil
1 medium yellow onion, diced
1 carrot, diced
4 cloves garlic, minced
2 canned chipotle chiles in adobo, chopped
1/2 cup chopped cilantro, divided
1/2 teaspoon ground cumin
1 tablespoon tomato paste
1/4 cup lime juice
salt, to taste

Rinse and sort through the beans, removing any stones and shriveled beans.  Place the beans in a large pot and cover with 1 inch of water.  Bring to a boil and then cook for 15 minutes.  Drain and rinse the beans in a colander in the sink.  Return the empty pot to the stove and on medium-low heat, warm the vegetable oil.  Add the onions and carrots to the pot and while occasionally stirring, cook until the onions are translucent and the carrots are lighter, about 8 minutes.  Add the garlic to the pot and cook for 30 more seconds.

Return the beans to the pot, along with the chipotle chiles and 1/4 cup of cilantro.  Cover with 2 inches of water, bring to a boil, and then turn the heat down to low and simmer uncovered for 1-1/2 hours.  After 1-1/2 hours, add the remaining cilantro, cumin, tomato paste, and lime juice.  Taste and add salt.  Cook uncovered for 30 more minutes or until beans are tender (the ultimate cooking time will depend on the freshness of your beans).  When done, smash a few beans against the side of the pot with a spoon to thicken the broth.  Stir the pot and serve.

My favorite pair of super perfect, I cannot live without them, Kelly jeans ( Ralph, if you are reading this can you please bring these back).

The tear that ruined them. And I am not the kinda girl that could or would ever be able to pull off the showing skin through my jeans thing ;o)

So Denyse, Ralph and I were able to go out and clear some trees for stacking firewood for the winter!
Adam found a tree, more like a sapling, that he was using for a bouncy ride.

I love my boy!

Thank you Denyse for saving Ralph so that I can continue to be comfortable and get things done!
