Baked Butternut Squash

Sometimes I think the key to hosting any holiday dinner is doing as much of the work as possible leading up to the actual holiday.  Believe me when I tell you that I'm not an organized person at all, but I've learned from many years of experience that organization around the holidays is a must.   So to minimize any nasty surprises, I like to be ultra-prepared.  This includes getting out all my serving dishes and place settings days before.  Then, I make an obsessive-compulsive looking grocery list (you definitely don't want to be without a key ingredient on Thanksgiving day). Lastly, and most importantly, I like to prepare as much of the feast as I can leading up to the actual day. I am so thankful for those dishes that stand up well and can be made the day ahead.

This baked butternut squash was one of the dishes that really held up well to being reheated in the oven the next day.  It was a beautiful and colorful addition to our holiday table and was one of the dishes that received the most compliments.  Everyone loved the fact that the squash was cut into wedges or spears.  They raved about how creamy and sweet it was.  I thought the squash was a wonderful contrast to everything else on my plate.  It really stood out on it's own. I would give this a spot on my table any time of year.
Baked Butternut with Butter & Sugar
Adapted from Apples for Jam by Tessa Kiros
Serves 6-8

3-1/2 tablespoons butter
2-1/4 pounds unpeeled butternut squash
1/4 to 1/3 cup light brown sugar
salt
4 tablespoons water
 2 bay leaves

Preheat the oven to 350F and generously butter the bottom of a large round ovenproof dish with some of the butter.  Peel the butternut by first cutting it in half, then scooping out the seeds with a spoon (save the seeds to toast in the oven for a snack).  Cut the squash into long slices that are about an inch thick.  Using a small sharp knife, carefully cut away the skin, keeping the shape of the squash slices and taking care that you don't cut yourself, as the skin is hard.  You should have about 1-1/2 pounds of butternut.

Scatter some of the sugar over the bottom of the dish and then lay the butternut slices flat, in a single layer.  Scatter the rest of the sugar over the top, dot with the rest of the butter, and sprinkle with a little salt.  Pour 4 tablespoons of water around the side and add the bay leaves.  Put into the oven for about 1 hour or until the butternut is soft and golden, even dark in places, and there is some thick golden juice bubbling away at the bottom.  Spoon the pan juices over the squash a couple of times during the cooking - if it looks a little too dry, add a dribble more water.  Serve warm.  If you aren't serving it immediately, then reheat it gently so that the butter melts again.

I had no intention of taking such a long break from blogging. I've been enjoying the fall weather, scents and palatable flavors tremendously this year. And I've been quite domestic. (What's up with that?) I actually enjoy it, but it does come in waves for me. So family, enjoy it while it lasts! :)

All the fun recipes and ideas on Pinterest inspire me. I know that's part of it. And then I got together with some friends to can apples. I asked my friend and neighbor, Natalie, to show me how and four other friends joined us. It was so enjoyable. Yep, I'm pretty sure that's were it started.

Natalie had extra Rome apples from her parent's trees, so she gave me a big box. I also borrowed her apple corer/peeler/slicer and now I want my own. It's very cool.

When I was done, I lined up my apples on the counter in plain sight and just kept walking by to admire them. :) They're just pretty and give me such a sense of accomplishment. We also made juice from the apples.

I made a batch of these yummy muffins to go with my tomato basil parmesan soup last week. My friend, Ginny, made them for a girls' getaway awhile back and they are delish. So sweet and moist they're almost like dessert. She pinned the recipe on Pinterest. It's from here.

APPLE CARROT MUFFINS

1 1/3 c. flour*
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon

1 tart green apple, peeled, cored and shredded
2 large carrots, peeled and shredded
2/3 c. shredded coconut
1/2 c packed brown sugar
1/2 c. sugar
2 eggs
1/2 c. canola oil
1 1/2 tsp. vanilla

In a large bowl, combine flour, baking powder, baking soda, salt and cinnamon. Stir in apple, carrots, and coconut.

In another bowl, combine sugars, eggs, oil and vanilla. Stir into dry ingredients, stirring sparingly.

Spray 12 muffin cups with non-stick cooking spray (or use liners). Divide batter among the 12 cups. Bake at 350 degrees for about 20 minutes.

*I used part (1/2 cup) whole wheat flour, just because I like the taste better.

Enjoy!

Papertrey November Blog Hop: Warmth & Joy

We had a wonderful Thanksgiving yesterday.  My husband did all of the cooking (he doesn't even let anybody in the kitchen!); my brother and his family joined us; we all ate too much and we all played* too much.  Besides the food, the highlight was viewing the photos that my brother had taken on a recent trip to Israel.  Amazingly, he stood in exact places named in the Bible as sites of Jesus' miracles!

A side story...we gave my brother his birthday card which included a wolf image.  Before opening it, he held it to his head (imagine Johnny Carson as Carnac), thought awhile and said "it's a wolf".  My jaw dropped.  It turns out they read my blog on a regular basis and I had posted it early!!!  Lesson learned...you never know who reads the blog!

Today, I am playing along with Papertrey Ink's November Blog Hop.

The inspiration photo for today's blog hop is a dream - I wish my home could look like that.  Unfortunately, I am married to a man who prefers a minimalist look to Christmas and my boys couldn't care less as long as there are presents!  But I love the photo because it is heavily decorated by still so fresh and natural.  I was inspired by the clean look of the photo, the warmth of the wood, the greenery and the dangling skates.

I used multiple Papertrey sets on this card.  The sentiment is from Stylish Sentiments: Holiday.  The pine boughs are from Bells & Boughs.  The ornaments are from Tiny Tags and the coordinating die set.  I used Bitty Background Basics to add the pattern on the white and gold ornament.

*How did we define "playing" yesterday??
With the turkey tryptophan sleepiness and given many of us had colds, this was our excitement yesterday...a lot of iPad/iPod action and you can see my brother's knees and laptop as he shows us pictures of Israel!  My oldest niece discovered the app Putt-Putt Saves the Zoo - a BIG hit - and my boys loved helping/playing with her.  My youngest niece was doing a memory match game - there were 24! squares on the screen and she methodically found every match!  Amazing!!  I'd love to tell you what my sister-in-law is doing/playing but I think I will hold on to that little tidbit just in case she EVER again shows my brother his birthday card on my blog!!

It's Wednesday! and ...My Mind is Wandering...

So, you may have noticed that it looks a little like Christmas around here...Pink Christmas...if you looked around at all, you may have seen that I have added a few festive touches...Hope you like it:)
I have been off since last Friday and I have to admit that I have been listening to Holiday music since then...I finally found the perfect station for me...so I am all set...My husband went and had some minor surgery and so he can't bring up the boxes of decorations so I can't decorate yet...foiled there...oh well...
I had a slight mishap with my Zune mp3 player that resulted in me having to reload the software and then I finally was able to get the darn thing to sync and then create the playlists that I wanted and now all is well...Hubby thinks I could be IT...I say as long as they give me unlimited hours to work on any given problem...
Ah, electronics...gotta love em...
Here is some more Pink Christmas for our pleasure...

the snowman...

Who knew building a  snowman would be so hard!!!! Coming from two inexperienced Aussies this little guy was the best we could manage when we visited beautiful Lake Louiise in Canada for our honeymoon 6 years ago.
I have combined some Indie bloom and Nordic holiday papers and accessories from Basic Grey to complete my layout!

You still have one more day to be in the chance to win a spot in my friend Gails online class here.
Till next...

Happy Birthday to Uncle Kurt

Today's Splitcoast Sketch Challenge seemed perfect for a wolf and a rising moon.  Yesterday was my brother's birthday and the wolf seemed perfect.  He and his family are coming to our home for Thanksgiving so I will give him the card then...I'm not late...really....(that's my story and I am sticking to it!)
